Growing up in Mobile, Alabama, Wes Lambert (owner of The Dumbwaiter Restaurant) was raised on southern food and fresh seafood. When Wes and his wife, Dana decided to create a business that showcased this style of cuisine, they knew that their flagship restaurant belonged in the heart of downtown Mobile. They wanted the menu to be as unique and creative as the city itself-classic southern dishes with their own special flavor. Local artisans and tradesman crafted the atmosphere inside the Dumbwaiter to reflect the ambiance of the city just outside its doors.
